{Recipe} Cinnamon French Toast

I love my eggs in the morning. And when I’m hanging for something sweet, I go for this scrumptious French toast so that I can incorporate my eggs AND delicious homemade jams! Served best with a smile, a snuggly doona and a cup of tea in bed.

INGREDIENTS

3 eggs
1/4 cup milk
1/4 tsp vanilla extract
1/4 tsp ground cinnamon
dash of nutmeg
3 slices dense crusty bread, sliced on diagonal
knob of butter
100% Canadian maple syrup or Taradale Kitchen Co jam, to serve

METHOD

  1. In a bowl, whisk the eggs until they are light and foamy. Whisk in the milk, vanilla, cinnamon and nutmeg.
  2. Transfer to a shallow baking dish and lay the slices of bread in the egg mixture. Let the bread soak for a few minutes on each side to coat thoroughly
  3. Heat a heavy-based fry pan on medium heat. Add a knob of butter to melt in the pan. Take each slice of bread out of the mixture, letting the excess drip (before you make a mess in the kitchen!), and lay in the fry pan. Cook for a couple of minutes on each side or until golden brown.
  4. Put slices onto a warm serving plate and serve with maple syrup or Taradale Kitchen Co Spiced Pear Jam (it’s a match made in heaven!).
